Epic Brunch Meatfest

So at various get-to gethers this summer where the topic is often food- we drifted from the normal dinner and lunch fare into the realm of breakfast or brunch. As many of you know breakfast is not really my favorite meal. First I don’t feel like eating much in the morning besides a granola bar, banana and a cup or six of coffee. I don’t really do eggs and most breakfast sausage doesn’t typically taste all that good to me. There are some things that I REALLY like like pancakes and bacon but the rare breakfast out or that elusive breakfast for dinner is enough to get me my fill every six months or so.
So after we nailed own a date for the brunch I went a tad overboard on the food and made half a dozen varieties of meat, blueberry buttermilk pancakes, a Cracker Barrel Clone Hash brown casserole dozens of biscuits and we had tons of other food that people brought muffins, fruit, more fruit, casseroles and mimosas.
It was rather tasty though my house still smells like grease, and I think we are all sill trying to shake off the meat coma.
We even wrote meat haikus so peeps, feel free to add them in the comments.
Next time I start cooking for people everyone remind me to tone it down- I will be eating breakfast leftovers for three weeks as it is.

The potatoes were a VERY big hit at the 74th annual family reunion. Delicious! And yes, I told everyone that I got the recipe from my “Yankee friend Eric.” Ha!
