Vegetblarian Challenge Day 2:
I forgot lunch-which means I probably had coffee for lunch and I had Pesto Pasta and a salad for Dinner.
The town was out of fresh Basil so we had the next best thing to homemade Pesto and that is Classico Pesto-for that Authentic Eye-talian flavor
At this point the recipe for both the pasta and the salad get complicated-But I’ll give it a try.
Pesto Pasta
Boil some water and add the pasta to the boiling water.
Cook until done, not goopy, just done.
Drain the pasta
Toast some pine nuts.
Open the jar of authentic home style pesto
Apply the pesto, toasted pine nuts and some grated asiago( or other appropriate dry cheese)
Mix.
Apple Walnut Salad.
Chop up 1.5 Fuji Apples
Coat the Apples with lemon juice.
Toast a handful of walnuts.
Open a bag of pre-washed salad.
Mix all of these ingredients
serve with a salad dressing of your choice- I had a balsamic vinaigrette
Vegetblarian Challenge Day 0:
Ok so I had a steak last night and a little slice of homemade pizza with some beef on it but today I go cold turkey.
I am going to try and eat vegetarian for one week. I don’t have anything against meat in fact I find it really tasty. I am just trying this as an experiment in diet to see if I can do it and to see how hard it is. My little brother Jay did a similar challenge for two weeks last semester so I thought I would give it a try. I unintentionally eat no meat for a few days at a time but this is a concerned effort to see what it is like. I know a few vegetarians and they seem to be relatively normal and happy people so I am going to give it a whirl.
My side goal is to list what I end up eating and I’ll tack on recipes if appropriate.
